Summary

The Sorbonne is an edifice or building of the Latin Quarter, in Paris, France, which was the historical house of the former University of Paris.

The name is commonly used to refer to the historic University of Paris or one of its successor institutions, but this is a recent usage. “Sorbonne” has been used with different meanings over the centuries.  Evelyn visited the Chapel of the Sorbonne during his visit.
